- ½ onion
- 1 green bell pepper
- 1 bunch green onions
- 2 jalapeno peppers
- 1 tablespoon garlic
- 1 pint cherry tomatoes
- 8 oz Italian salad dressing
- 15 oz black beans, drained
- 15 oz black-eyed peas, drained
- ½ teaspoon coriander
- 1 bunch cilantro
Chop the first five ingredients. Quarter the tomatoes. Mix everything but the cilantro together and chill for two hours. Mix in chopped cilantro before serving.
