- 3 cups cottage cheese
- 3 cups grated cheddar
- 1 bunch green onions, chopped
- 14 oz. green chile salsa or your favorite enchilada sauce
- tortillas
Mix the green onions, cottage cheese, and 1 cup of the cheddar. Cover the
bottom of a baking dish with about half the sauce. Spoon the mixture into the
tortillas, roll them up, and place them seam side down in the baking dish.
Cover with more sauce, then sprinkle remaining cheese on top. Bake at 350
until hot, about 20 minutes.
