- 1 can black beans, drained
- 1 egg white
- ¼ cup tortilla chip crumbs
- ¼ cup diced red bell pepper
- 2 tbsp onion, grated or chopped
- ½ tsp kosher salt
- ½ tsp ground coriander
- ½ tsp chili powder
Mash 1/2 cup beans with egg white. Add remaining ingredients. Refrigerate for 10 minutes, then form into cakes and fry over medium-high heat, 4 minutes per side.
